WHere is a home-style interpretation of a beverage from the seasonal cocktail list. It's a large-volume pre-mixed that's loaded with the flavours associated with holiday season, which makes it ideal for a celebration. Any leftover syrup to use in brunch beverages, desserts, or to mix more rounds of the drink.
Serves 10 people
300ml newly squeezed clementine juice
200ml fresh lemon juice
500g caster sugar
400ml good quality vodka
100ml London dry gin
150ml peach liqueur
200ml clementine syrup (as made above)
Fresh cranberries, to garnish
Mandarin essential oil, to finish
For the Syrup: Combine every items inside a saucepan, heat until it reaches a gentle boil, mixing until the sugar dissolves. Next, take off the burner and leave to reach room temperature fully. Pour to a clean bottle, cap it and refrigerate it chilled, it can be stored for up to a month.
For the Cocktail Base: Mix every liquids into a large bottle, allow it to infuse for one hour, then filter it best through a fine cloth, so it's perfectly clear.
For serving: Measure 85ml of your cocktail base to a cocktail shaker containing ice, and agitate carefully for one minute to cool it down. Pour into an chilled martini glass or a similar vessel, decorate with some cranberries adding the final touch by giving it a brief mist with the mandarin essence above the glass.
